This great recipe is a winner if you trun up with it for a BBQ or pot luck dinner party.
Its super easy, light and summery.
PLUS Quinoa is a complete protein, meaning that it contains all the amino acids which are the building blocks for protein, so it’s a winner for the ‘Where do you get your protein’ discussion.
Quinoa is cooked like a grain, but is actually a grass, so its healthy, light AND gluten free.
When cooking Quinoa it’s a 2:1 ratio. 2 parts water to 1 part quinoa. Easy!
Makes a medium sized salad, so double up where you need.
Ingredients:
- 1 cup quinoa
- 1 cup defrosted frozen peas
- 3-4 finely chopped spring onions
- 3-4 tbsp chopped fresh mint
- Juice of half lemon plus zest
- 1 dash of olive ol
- Salt and pepper seasoning
Method:
Rinse your Quinoa off in a sieve.
Pour your 1 cup Quinoa into 2 cups of boiling water in a pan
Stir, cover and bring down to simmer.
Leave to cook for 15ish mins.
Look out for the ‘tails’ starting to spiral out from the Quinoa. That tells you its ready.
Add it into your serving bowl.
Pour a little oil over and fork it through to fluff up.
Then add all other ingredients and mix.
