Pea, Watercress & Mint Soup

Its soup season…..

This is a gorgeous green soup!  I just love it.  Nothing more to say really…..except peas are great form of protein.

 

Ingredients:

(My measurements are always rough and done mostly by eye, so use your instinct abit here)

  • Large handful of watercress per person
  • 1 cups of peas per person
  • Few springs of fresh mint per person
  • Enough vegan stock to cover (I use low salt Bouillion)

 

Method:

Place watercress and peas in a saucepan cover with stock and simmer till peas soft.

Add mint for last minute or so.

Whizz up into a smooth consistency

Voila!
